PAISAN is a pop-up and pastificio taking a playful and nostalgic approach to provincial Italian cooking, paying attention to bold flavour, seasonality and providence.

Trained as a pastaio, chef Tiberio Simonelli brings experience from some of London’s favourite independent restaurants. Expect a creative and thoughtful approach to classical recipes rooted in the culinary traditions of the peninsula, focusing on pasta fresca and fire cooking whilst showcasing regional Italian specialities and quality produce from the seas and fields of the British Isles.
